LCD – All Recipes, Soup
224 grams (8 ounces) strawberries
2 apples
Juice of 2 oranges
1 tablespoon finely grated lemon zest
(GF, DF, NF, YF, V)
Puree the strawberries in a blender, then place into a saucepan.
Grate the apples and add to strawberries with the orange juice and lemon zest.
Bring to a boil, then simmer for 10 minutes.
Remove from the heat and put through a sieve.
Discard residue and return the mixture to the saucepan to reheat.
If desired, the mixture can be thickened with a little cornstarch dissolved in orange juice.
Simmer for 3 more minutes, stirring continuously.
Allow to cool and chill.
Serve with slices of orange or strawberries and soy milk yoghurt.
If desired to sweeten more, drizzle over 1 teaspoon of honey or sprinkle with a 1/4 teaspoon Nature Sweet Sugar Substitute.
